Black Bean Salsa

Got this healthy recipe from my friend, Linda......makes a TON though, so you might want to wait until you are cooking for a crowd!

Black Bean Salsa

2 (16oz) cans black beans, rinsed and drained
1 (17oz) can white shoepeg corn, rinsed & drained
2 large tomatoes, peeled, seeded and chopped
1 large avocado, peeled and chopped
1 purple onion, chopped
1/4 cup chopped fresh cilantro
1/4 cup lime juice
2 Tbsp red wine vinegar
1 tsp salt
1/2 tsp black pepper

Combine all ingredients in a large bowl and mix gently. Cover and chill until serving time.
