Brown & Wild Rice with Walnuts & Cranberries

I could eat this every day - delicious!

2 tsp canola oil
2 shallots, finely chopped
2 cloves garlic, minced
1/2 cup brown rice
1/2 cup wild rice
3 cups vegetable stock
1/8 tsp salt
1/8 tsp crushed red pepper
1/3 cup dried cranberries
2 Tbsp chopped walnuts
1/2 tsp grated orange zest

Heat oil in large saucepan over medium heat. Add shallots and garlic and cook, stirring, until softened, about 3 minutes. Add the brown rice and wild rice; cook, stirring, until lightly toasted and fragrant, about 3 minutes. Add stock, salt and pepper; bring to a boil. Reduce heat and simmer, covered, until the rice mixture is almost tender, about 30 minutes.

Add the cranberries and cook until the rice mixture is tender, but still chewy, 7-10 minutes. Add walnuts and orange zest; toss lightly. Serves 8.
